Recipe of the week

Easiest Crock Pot Recipe Ever




1 beef chuck roast (about 3lbs)
2 cups of water
1/2 cup soy sauce, low sodium is fine
1 tsp. dried rosemary
1 tsp. dried thyme
1 tsp. garlic powder
1 bay leaf
3-4 whole pepper corns


8 french rolls

Place roast in crock pot. Add water, soy sauce & seasonings. cover and cook on high for at least 6 hours until beef is tender. Remove beef from crock pot and shred with forks. Keep warm. Strain broth and skim off fat. use broth for dipping. Fill rolls with beef and enjoy!

This is really good and not to fattening either! If you buy the cordelane brand rolls they are only 2 points for those of you doing weight watchers! Enjoy

After a few long days of unpacking, we had to get out of the house and explore. So we decided to take a trip to the coast. It was a great choice since the weather was unusually warm for the Oregon coast. It was 61 degrees in Newport! I could get used to this! :)

As you know, I've moved to Oregon. It was quite the trek up here with the moving van and the trailer that was towing my car. Trish had to drive her truck behind the van and took advantage of some photo taking opportunities.

Here at last!

Well I made it to Oregon last night! It was quite a journey with lots of different challenges. The main thing is I made it here and now the fun of the unpacking begins:( I will post pictures of the trip soon I hope everyone is doing well! Have a good Day:)

Moving

Sorry I havent been blogging lately but I have been busy packing, visiting friends and family and cleaning:( I am getting excited for the move to Oregon this next week and I hope the weather will hold out long enough to get there! I will miss Utah for the beautiful mountains around us and having family close but it will be nice to enjoy new scenery. I will try and get to a computer as soon as I can:) Till then have a great weekend everyone! Love you all

Lowfat but really good recipe for the week!

My friend Reby sue is always after me because my recipes are fattening. So this one is for you! I will try and put a few in that are lowfat but still really good.


Apple Turnovers

Ingredients:
Vegetable oil cooking spray
2 medium Granny Smith apples, cored and thinly sliced
3 tbsp apple juice concentrate
2 tsp whole-wheat flour
1/4 tsp cinnamon (plus extra for sprinkling)
4 sheets phyllo dough, thawed
1 tbsp confectioners' sugar (optional)

Preparation:Heat oven to 375°. Coat a cookie sheet with cooking spray. Toss apples, concentrate, flour and cinnamon in a bowl. Stack 2 phyllo sheets at a time and cut them in half lengthwise. Place 3/4 cup of apple mixture across the end of one half. Roll up and place on cookie sheet. Repeat until you've used up all apples. Brush top of each roll with juice from apple mixture. Sprinkle with cinnamon. Bake until browned, 15 to 20 minutes. Let cool. Sprinkle with sugar, if desired. Cut each roll in half.

New year, new changes

Happy New Year! I am excited to have a new year full of suprises. In a couple of weeks I will be moving to Oregon and I am very excited to go back. As some of you know I lived there through my elementary year days and loved it! I have always wanted to move back and I have the chance to do it so I am moving forward with the choice. It might be awhile between posts on my blog but be patient and keep checking back. I wish all of you luck through the new year and with any goals that you might have!
